20 Min. Healthy Burrito Bowl

This Burrito bowl is one of my absolute favorite healthy recipes because it takes absolutely no time at all, is SUPER filling, and I know I’m feeding my body well every single time I put it together. However, I think the best part about it is that it takes max 20 minutes to make.


What you’ll need:


1 can black beans

Chicken breast or protein of your choice

Bunch of Cilantro

Pico de Gallo

Brown rice

Fresh lime

Sour cream (optional)


The first thing you’ll want to do is dice your chicken breast into small pieces and season well with garlic powder, pepper, seasoning salt, and onion powder. You'll want to start your chicken first because it is the only thing in the bowl that actually needs to be cooked. Cook the chicken in a pan on medium high heat with a couple tablespoons of olive oil in the pan for around 10 minutes or until it is cooked through.


Open up your can of beans and drain and rinse them. Set these to the side and in a microwave safe container as you will be heating them up to serve in your bowl later on.


Next, chop up your bunch of Cilantro. I love cilantro and usually use around ¾ of the bunch, but you can probably use around half. You’ll want to chop the Cilantro as well as you can. Once you cut off your desired amount from the stem grip the bunch tightly in one hand and chop well with the other. When finished, set aside.


I personally buy single serving brown rice cups so that I don’t have to deal with the mess of making rice and I know exactly how much I’m consuming, and I HIGHLY recommend doing this if these are available at your local grocery store.


I also buy my pico fresh the produce section to forgo the hassle as well. If you would like to make your own pico you easily can with diced tomato, diced jalepeno (optional), diced white onion, chopped cilantro, and fresh lime juice.


Follow the instructions on the brown rice cup and heat accordingly. Warm up your black beans as well.


Once all of your ingredients are ready to plate grab a wide bowl (I got this blue one from target for less than a dollar and I am obsessed with it. I think it’s with the back to school dorm stuff) and section off your ingredients in a circle.


Lastly, add some slices of limes on the side and a dollop of sour cream. Don’t forget to take a pic for the gram! LOL
