Jamaican Vegan Potato Curry

Being raised in a Jamaican household, all of our dishes were rich, well seasoned and full of spice. Jamaicans LOVE meat and many popular dishes involve some sort of animal product. One of my all time favorite Jamaican dishes is curry chicken! However, I do try to keep my consumption of animal products relatively low, so when I’m craving a yummy curried dish one of my favorite vegan meals is Jamaican Vegan Potato Curry. It has the same great flavors and spices as curry chicken but..minus the chicken!







Here are the ingredients you will need:

~1 tablespoon coconut oil

~1 small onion (chopped)

~4 cloves of garlic (minced) 

~1 teaspoon ginger (grated)

~2 stalks scallion (green onion)

~½ tbsp curry powder 

~2 sprigs of thyme (or 1 tsp dried thyme)

~1 medium tomato 

~4 medium potatoes or 3 large potatoes

~1 medium carrot 

~1 15oz can of cooked chickpeas 

~1 15oz can of coconut milk

~1 cup water 

~½ cup frozen peas 

~1 tsp salt

~1 scotch bonnet pepper (or habanero pepper)

~¼ ground allspice/pimento

Instructions 

Step 1) heat your oil in a large saucepan and add your onion, sauté until they are transparent (about 3-4 mins). Then throw in your garlic, ginger and green onions and stir it up for another minute 


Step 2) then add your curry and thyme and stir it consistently until fragrant (smell the sweet aroma yum!!). After you have that all mixed in add your tomato, potato, carrots, chickpeas, coconut milk and water. 


Step 3) cover your pan and bring to a boil. Once boiled bring to a simmer and cook for about 30 mins until thickened.


Step 4) throw in the peas, salt, allspice and the WHOLE scotch bonnet pepper (do NOT cut it unless u tryna burn your lips off) 






Serve over rice of your choice, or you can eat it alone!
