Here’s my recipe for my marinated Salmon and cauliflower mash with mango salsa. It's soooooo delicious, I hope you enjoy!
Ok so lets start with our marinade.
INGREDIENTS:
1/3 brown sugar
1/3 water
1/3 soy sauce
1/4 olive oil
2 tbs garlic (minced or fresh)
Lemon pepper (season generously)
Let it sit for 30 min to two hours (preferred) or longer if you have time
*you do not have to wait if you do not have time but letting it properly marinate will enhance the flavor
After preparing your marinade place your salmon (precut into individual servings) into a container or plastic bag. I usually cover the fillets with lemon pepper and put them in the bag and in the fridge until it's time to cook.
When itʼs time to cook I put them in a dish, pour the marinade over and add more lemon pepper. I like to put them in a shallow dish when the tops of the fish are peaking out so it gets some color.
Cook your salmon on 400 for 20 min or till theyʼre firm but still have a lil give. You donʼt want it too firm to where itʼs like solid lol.
While my salmon is cooking, Iʼll prepare the mango salsa.
INGREDIENTS:
mango diced
finely chopped cilantro
diced red onion
diced tomato
one large lime
Make sure all your ingredients are finely chopped then add the juice of one lime and mix together.
Iʼve been making it with cauliflower mashed potatoes which are just:
INGREDIENTS:
1 head of cauliflower or bag of frozen cauliflower
1-2 tbs sour cream (or dairy free alternative)
tbs butter
seasoning salt and pepper to taste
After gathering your ingredients, combine them all in a small bowl. Then, mash or blend together until you get the consistency of your liking.
Plate the Salmon on top of the mash and add your salsa on top and enjoy!
